How to Cook "Double Cooked Pork"
1. Preparation
- Put the pork in one piece into the boiling water; simmer for 5-10 minutes.
- Remove and drain; cut through the pork so that each strip has some skin, lean, and fat.
- Cut the green pepper into small strips, discard the stem and seeds.
2. Pork Cooking - first time
- Heat the oil in a frying pan.
- When hot, fry the pork slices for a few minutes until they become a little crinkled.
- Remove the slices from the oil.
3. Simmering the Seasoning
- Add bean sauce, ginger and garlic to the oil.
- One minute later add soy sauce and wine.
- Continue stirring over the heat until the mixture becomes a red bubbly sauce.
4. Pork Cooking - second time
- Add the slices of pork.
- Turn and stir until each slice of pork is well covered with the sauce.
5. Adding Green Pepper
- Add the green pepper, and some salt. Continue to stir over high heat for several minutes.
6. Ready to Serve
- Add the spring onions.
- Remove from the heat and serve.
PS: actually, the green pepper can be replaced by many other kinds of food, such as agaric, "dried bean curd", bamboo shoot, celery, etc. Or put several kinds together.
